Our
sensor is the world's first sensor to indicate the freshness of fruit
by using it's aroma luminescence.
The volatile compounds are responsible for the aroma luminescence under
the light excitation of the fruit. The detection and spectral analysis
of this luminescence enables complete characterization of the volatile
compounds involved.
This luminescence signature constitutes a fundamental information of each
fruit species and maturation state. With this knowledge it is possible
to characterize the maturation/ageing state of each fruit, in vivo
and in real time.

By
monitoring the aroma luminescence of fruit that is still in the tree or
in-strore after harvesting and comparing with the traditional parameters,
the ripeness/aging patterns are defined for each fruit variety.



Ripe
fruit can be instantly recognised.
Several
kinds of fruits have no visible changes during ripening and the visible
signs of biochemical evolution can be different for each fruit variety.
The
lack of knowledge about the ripeness can be a barrier to purchase. Our
sensors completely eliminate those problems by giving precise information
on the ripeness of any specific fruit.
